A graduate of the Cascade Culinary Institute in Bend, Oregon, chef Michael House has been passionate about the culinary arts from a young age. He has worked in many kitchens, from fast food to catering companies, golf courses to fine-dining. Pair his passion for cooking with the unique opportunity of a night of fine dining at the newly designed and reimagined clubhouse on Old Fort Road. You and your party of 12 will choose one of the gourmet meal options below and enjoy an evening you won’t soon forget!
Medieval English Feast:
Enjoy a meal fit for a king! Begin your meal with both barbecue chicken and lemon pepper shrimp skewers and fresh french bread with rosemary infused butter and assorted cheeses. Next, enjoy a hearty seasonal vegetable pottage stew followed by a robust main dish of tender garlic marinated beef roast in a mushroom-balsamic glaze paired with flavorful wild rice and roasted gold potatoes. Round this feast out with a house made fortified raspberry mead.
French Fine Dining Menu:
Begin this experience with amuse-bouche, or “gift from the kitchen”, of tomato basil bruschetta followed by the delicious flaky crust of a quiche Lorraine appetizer. Next you’ll be served a bacon spinach warm salad and the classic French soup, Soupe de Poissons. Enjoy the French method of procuring perfectly cooked salmon with Salmon en Papillote. Finish this fine French cuisine with lemon butter macarons. Complementary wine pairing provided.
